Projects A, B, C, D, & E Culinary Arts
PROJECT A: Develop knife skills by creating Food art – Create a piece of food art that is big enough to feed your class. Review types of food art online. There are many books that teach knife skills (How to Garnish by Harvey Rosen and Edible Art: Tricks & Tools for Master Centerpieces from Carved Vegetables Narahenapitage Sumith Premalal De Costa) and youtube videos that give inspiration about how to create food art. If you have a particular interest in dietetics or nutrition, ensure the food art is also a healthy treat.
MATERIALS NEEDED: books, internet access, foods (which will vary based on student project design) and carving knife.
PROJECT B: Create a wedding cake for a couple from a different country. Students should research weddings in other countries (21st Century theme: Global Awareness). You may pick India and China because of their distinctive weddings, but any non-familiar country works. This is a great opportunity for students to experiment with fondant, piping, edible glitter and the like (again, make the cake serve the number of students in class). Piping skill will be practiced in class.
MATERIALS NEEDED: internet access, cake decorating tools, food items as chosen by the students and a cake topper (also chosen by students).
PROJECT C: Demonstrate knife cuts in10-12 sizes. Create your own play-dough to practice the cuts. Transfer your skills into a soup or dish of your choosing to share with the class.
PROJECT D. Create a food truck business. Include all the things necessary to set up business, as well as your concept for the menu. Prepare a sample dish from your food truck! Include the concept, 8-10 menu ideas and recipes, regulations/ required for obtaining a license and prepare 1 item to show/share with the class. See Mrs. Ehrlich for more information.
PROJECT E; Cook through a food. Example: Prepare simple eggs in 10-12 different methods. Include recipes and photographs of your food. Present one food during the class presentation.

Projects A & B: Human Performance
PROJECT A: Pick a unique sport not usually taught in PE class. Learn the sport and instruct in a 6th grade study hall or PE class. This could also include games not taught typically in gym class.
PROJECT B: Redesigning the PE curriculum for the 21st Century. Review 21st Century Skills (see Ms. Ehrlich) and create a year-long PE course that you feel helps meet those skills. Include worksheets that would help you introduce your curriculum.
Projects A and B: Nutrition
Project A: Select and a popular snack food recipe and find a recipe that makes it healthier. Prepare and serve both recipes and survey students reactions to the changes.
Project B: Select and research a current issue in Nutrition. Write a community newsletter that promotes ways to handle that issue. See Mrs. Ehrlich for an example.
